Super simple and can be eaten cold and is a great packed lunch option.
1. Bring a large pan of water and a pinch of salt to the boil. Add the penne pasta.
2. Heat a frying pan until hot, add a couple of sprays of the oil and add the Quorn chunks and cook for 5-10 minutes until golden brown.
3. Add the chopped tomato, tomato puree, and 3 tablespoons of the pasta water to make a thin sauce. Stir until evenly coated and season with the salt and pepper.
4. Drain the pasta and add to the Quorn mixture. Stir to cover in the light sauce and serve with a little fresh parsley.
