- Heat a frying pan and add a couple of sprays of the rapeseed oil. Add the onion, red pepper and sausage pieces to the frying pan, cook for 4-5 minutes and stirring occasionally until the sausages have started to brown.
- Add the Mexican style rice to the pan with 3 tablespoons of water and cook for a further 3-4 minutes, until the rice is piping hot.
- Remove from the heat and serve straight away, garnished with a little parsley if using
This is great cold served with a large green salad
Use vegetarian or vegan sausages as an alternative.
